Baked Zucchini Balls (Printable Version)

# Ingredients:

01 - 680g zucchini
02 - 360ml seasoned panko breadcrumbs
03 - 2 large eggs, beaten
04 - 180ml freshly grated Parmesan cheese
05 - 2 cloves garlic, minced
06 - 1 teaspoon dried basil
07 - 2 teaspoons dried parsley
08 - 1 teaspoon kosher salt
09 - 1/2 teaspoon black pepper

# Steps:

01 - Heat oven to 200°C. Line baking sheet with parchment paper. Grate zucchini and thoroughly squeeze out moisture using a clean kitchen towel.
02 - In a large bowl, combine the squeezed zucchini with breadcrumbs, beaten eggs, Parmesan cheese, minced garlic, dried herbs, salt, and pepper until well incorporated.
03 - Shape mixture into 20 uniform balls using a gentle squeezing motion rather than rolling. Place on prepared baking sheet with space between each.
04 - Bake for 15 minutes, then flip each ball and continue baking for another 15 minutes until golden brown and firm to the touch.
