Zucchini Cheese Breadsticks (Printable Version)

Crispy, cheesy breadsticks using fresh zucchini instead of flour - a delicious low-carb alternative ready in 40 minutes.

# Ingredients:

01 - 4 cups grated zucchini
02 - 1/2 cup mozzarella cheese
03 - 1/3 cup parmesan cheese
04 - 1 egg
05 - 1 teaspoon garlic parsley salt
06 - 1 cup grated cheese of choice for topping

# Steps:

01 - Thoroughly squeeze out all liquid from the grated zucchini using a clean kitchen towel or cheesecloth.
02 - In a large bowl, combine the squeezed zucchini, mozzarella, parmesan, egg and garlic parsley salt. Mix until well incorporated.
03 - Spread the mixture in a thin, even layer (approximately 1.25 cm thick) on a parchment-lined baking dish. Bake at 220°C (425°F) for 15 minutes until firm.
04 - Remove from oven and evenly distribute the additional cup of grated cheese over the partially baked zucchini base.
05 - Return to oven and bake for an additional 2-5 minutes until the cheese melts completely and begins to brown at the edges.

# Notes:

01 - Spread mixture about half inch thick for best crispiness.
02 - Serve immediately while hot for optimal texture and flavor.
