Thoroughly squeeze out all liquid from the grated zucchini using a clean kitchen towel or cheesecloth.

In a large bowl, combine the squeezed zucchini, mozzarella, parmesan, egg and garlic parsley salt. Mix until well incorporated.

Spread the mixture in a thin, even layer (approximately 1.25 cm thick) on a parchment-lined baking dish. Bake at 220°C (425°F) for 15 minutes until firm.

Remove from oven and evenly distribute the additional cup of grated cheese over the partially baked zucchini base.

Return to oven and bake for an additional 2-5 minutes until the cheese melts completely and begins to brown at the edges.
