Roast Beef & Cheddar Sliders (Printable Version)

Tender shaved beef with creamy cheddar sauce on seasoned slider rolls, finished with a tangy homemade Arby's-style sauce.

# Ingredients:

→ Beef

01 - 1 1/2 pounds shaved rare roast beef
02 - 2 cups beef broth
03 - 3 tablespoons Worcestershire sauce

→ Cheese Sauce

04 - 2 tablespoons butter
05 - 2 tablespoons all-purpose flour
06 - 1 cup whole milk
07 - 1/4 teaspoon kosher salt
08 - 1/4 teaspoon white pepper
09 - 1/4 teaspoon dry mustard
10 - Pinch of nutmeg
11 - 1 1/2 cups shredded sharp white cheddar

→ Assembly

12 - 12 slider rolls
13 - 2 tablespoons melted butter
14 - 1-2 tablespoons everything bagel seasoning
15 - Arby's sauce

# Steps:

01 - Combine beef broth and Worcestershire sauce in a saucepan. Allow shaved roast beef to come to room temperature while preparing other components.
02 - In a separate saucepan, prepare a roux by melting butter and whisking in flour until smooth. Gradually add hot milk, seasonings, and shredded cheddar, stirring continuously until the sauce is velvety and smooth.
03 - Bring the broth mixture to a boil. Add the room temperature beef, swirl quickly to heat through, then immediately strain to prevent overcooking.
04 - Arrange roll bottoms in a baking dish. Spread each with Arby's sauce, then layer with warm roast beef and top with cheese sauce. Place roll tops over assembled sliders, then brush with melted butter and sprinkle with everything bagel seasoning.
05 - Cover baking dish with foil and bake at 180°C (350°F) for 15 minutes. Remove foil and continue baking for 10 minutes until golden. For extra crispness, broil briefly, then brush with remaining butter before serving.
