02 - 1 cup shredded cheddar cheese
03 - 1/4 cup cooked and crumbled bacon
04 - 2 green onions, finely chopped
05 - 1/2 teaspoon garlic powder
06 - 1/2 teaspoon salt
07 - 1/4 teaspoon black pepper

→ Coating

08 - 1 cup all-purpose flour
09 - 2 large eggs, beaten
10 - 1 cup breadcrumbs
11 - Cooking spray or olive oil

# Steps:

01 - Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly coat with cooking spray or olive oil.
02 - In a large bowl, thoroughly combine mashed potatoes, shredded cheddar cheese, crumbled bacon, chopped green onions, garlic powder, salt, and black pepper until well integrated.
03 - Using a tablespoon measure, scoop the potato mixture and roll between your palms to form uniform balls.
04 - Create a breading station with three separate dishes. Roll each potato ball first in flour, then dip in beaten egg, and finally coat with breadcrumbs. Place the breaded balls on the prepared baking sheet.
05 - Lightly spray the breaded balls with cooking spray for optimal browning. Bake in the preheated oven for 20-25 minutes until golden brown and crispy on the outside.
06 - Allow the potato cheese balls to cool slightly before serving. Present warm with ranch dressing or sour cream for dipping.

# Notes:

01 - Add a small cube of cheese to the center of each ball before coating for an extra melty surprise
02 - These can be prepared in advance and reheated in the oven at 350°F (175°C) for 10 minutes to maintain crispiness
