Heat oven to 400°F (200°C). Line a baking sheet with parchment paper.

Make 9 small pools of honey on the parchment paper. Cut pastry sheet into 9 even squares.

Sprinkle thyme, salt and pepper over each honey pool. Layer one onion slice and two cheese pieces on each honey base.

Place a pastry square on each stack. Brush tops with beaten egg.

Place in oven for 20 minutes until golden brown and puffy.

Carefully flip tarts over. Drizzle with extra honey and garnish with fresh thyme. Allow to cool for 5 minutes before serving.
