Onion Gruyere Tarts (Printable Version)

Flaky pastry bites with caramelized onions and melted gruyere, finished with sweet honey and fresh thyme.

# Ingredients:

01 - 1 sheet thawed puff pastry
02 - 1 yellow onion, cut into thin rings
03 - 3 tablespoons honey, divided
04 - 2 sprigs fresh thyme
05 - Sea salt to taste
06 - Black pepper to taste
07 - 18 thin slices gruyere cheese
08 - 1 large egg for washing

# Steps:

01 - Heat oven to 400°F (200°C). Line a baking sheet with parchment paper.
02 - Make 9 small pools of honey on the parchment paper. Cut pastry sheet into 9 even squares.
03 - Sprinkle thyme, salt and pepper over each honey pool. Layer one onion slice and two cheese pieces on each honey base.
04 - Place a pastry square on each stack. Brush tops with beaten egg.
05 - Place in oven for 20 minutes until golden brown and puffy.
06 - Carefully flip tarts over. Drizzle with extra honey and garnish with fresh thyme. Allow to cool for 5 minutes before serving.
