Crispy Cheesy Potato Bites (Printable Version)

Golden potato puffs with cheese and green onions baked until crispy - perfect for transforming leftover mashed potatoes.

# Ingredients:

→ Base

01 - 2 cups mashed potatoes
02 - 1 cup shredded cheddar cheese
03 - 1/4 cup grated Parmesan cheese
04 - 2 large eggs
05 - 1/4 cup milk

→ Seasonings

06 - 2 green onions, chopped
07 - 1/2 teaspoon garlic powder
08 - 1/2 teaspoon smoked paprika (optional)
09 - Salt and pepper to taste

# Steps:

01 - Heat oven to 400°F (200°C). Thoroughly grease a standard muffin tin.
02 - Combine mashed potatoes, cheddar cheese, Parmesan cheese, eggs, milk, chopped green onions, garlic powder, smoked paprika, salt and pepper in a bowl. Mix until smooth and well incorporated.
03 - Spoon the potato mixture into the greased muffin cups, filling each about 3/4 full.
04 - Bake in preheated oven for 20-25 minutes until the tops are golden brown and the bites are set.
05 - Allow to cool slightly, about 5 minutes, before carefully removing from the muffin tin.
