In a separate bowl, whisk together eggs, melted butter, milk and vanilla extract until well combined.

Pour wet ingredients into the dry mixture, whisking gently until just combined. Small lumps are acceptable - avoid overmixing.

Heat a griddle or skillet over medium heat and add a small amount of butter. Pour ¼ cup portions of batter onto the hot surface and cook until bubbles form on top.

Flip hotcakes and cook the other side until golden brown. Serve immediately or keep warm in a low-temperature oven.
