Homemade Mayonnaise (Printable Version)

Silky, fresh mayonnaise made with eggs, oil and lemon juice - a simple 10-minute alternative to store-bought varieties.

# Ingredients:

01 - 1 large egg
02 - 1 teaspoon salt
03 - 1 tablespoon fresh lemon juice
04 - 1 cup avocado or olive oil
05 - 2 drops garlic juice (optional)

# Steps:

01 - Process egg, salt, lemon juice and optional garlic juice for 30 seconds.
02 - Slowly drip in oil while processing for 1.5 minutes.
03 - Scrape sides, process 30 more seconds until very thick.
04 - Refrigerate at least 4 hours for flavors to meld and thicken.

# Notes:

01 - Cold eggs work well.
02 - Can use whisk or immersion blender.
03 - Will thicken more in fridge.
