Fruit Danish Breakfast Pastries (Printable Version)

# Ingredients:

→ Pastry Base

01 - 1 box (2 sheets) puff pastry dough, thawed

→ Filling

02 - 8 oz cream cheese, softened
03 - 1 tablespoon sour cream
04 - 3 tablespoons granulated sugar
05 - 2 teaspoons lime juice
06 - Zest of 1 lime
07 - 2½ teaspoons Mexican vanilla or vanilla extract

→ Toppings

08 - Fresh blueberries
09 - Fresh strawberries, halved
10 - 3 tablespoons melted butter
11 - Sanding sugar
12 - Extra lime zest for garnish (optional)

# Steps:

01 - Preheat oven to 400°F (200°C).
02 - Cut 4 rounds from each pastry sheet using a 4.5-inch biscuit cutter.
03 - Score each round with a smaller cutter to create a border.
04 - Place prepared rounds on baking sheets lined with silicone mats or parchment paper.
05 - In a stand mixer, combine cream cheese, sour cream, sugar, lime juice, lime zest, and vanilla until smooth.
06 - Place approximately 2 tablespoons of filling in the center of each round.
07 - Carefully spread the filling, leaving a ¼-inch rim around the edge.
08 - Top half of the pastries with fresh blueberries.
09 - Top the remaining pastries with halved fresh strawberries.
10 - Bake for 15-16 minutes until golden brown and puffed.
11 - Allow pastries to cool to room temperature before serving.
12 - Sprinkle with additional lime zest if desired before serving.
