Cook turkey bacon in a skillet until crisp. Set aside on paper towels to drain excess grease.

Whisk eggs with half and half, salt and pepper. Melt butter in a skillet over medium heat and cook egg mixture, stirring gently, until soft and just set.

Place croissant bottoms on a baking sheet. Layer each with a slice of cheddar cheese, followed by turkey bacon and a portion of scrambled eggs.

Place croissant tops alongside the assembled bottoms and bake at 350°F (175°C) for 10-15 minutes until cheese is completely melted. Complete sandwiches by adding the tops.
