Croissant Breakfast Sandwich (Printable Version)

Buttery croissants filled with soft scrambled eggs, turkey bacon and melted cheddar - a perfect make-ahead morning meal.

# Ingredients:

01 - 6 croissants
02 - 6 slices turkey bacon
03 - 2 tablespoons butter
04 - 8 eggs
05 - 60 ml half and half
06 - Salt and pepper to taste
07 - 6 slices cheddar cheese

# Steps:

01 - Split croissants horizontally and toast in oven at 350°F (175°C) for 5-10 minutes until lightly golden.
02 - Cook turkey bacon in a skillet until crisp. Set aside on paper towels to drain excess grease.
03 - Whisk eggs with half and half, salt and pepper. Melt butter in a skillet over medium heat and cook egg mixture, stirring gently, until soft and just set.
04 - Place croissant bottoms on a baking sheet. Layer each with a slice of cheddar cheese, followed by turkey bacon and a portion of scrambled eggs.
05 - Place croissant tops alongside the assembled bottoms and bake at 350°F (175°C) for 10-15 minutes until cheese is completely melted. Complete sandwiches by adding the tops.

# Notes:

01 - These sandwiches work well for meal prep - assemble and refrigerate, then reheat when needed.
02 - For best texture, ensure eggs remain slightly soft when initially cooked as they will continue cooking during the baking process.
