Crispy Zucchini Fritters (Printable Version)

Golden-brown zucchini patties with Parmesan and garlic, perfectly crispy on the outside and tender on the inside.

# Ingredients:

01 - 1½ pounds zucchini (about 3 medium)
02 - 2 garlic cloves, finely minced

→ Pantry Staples

03 - 1 teaspoon salt
04 - ½ cup all-purpose flour
05 - ¼ teaspoon black pepper
06 - 2 tablespoons olive oil

→ Dairy & Eggs

07 - ¼ cup grated Parmesan cheese
08 - 1 large egg, whisked

# Steps:

01 - Preheat oven to 180°C (350°F).
02 - Grate zucchini and sprinkle with salt. Let sit for 10-15 minutes, then strain excess moisture using cheesecloth or a thin dish towel.
03 - In a large bowl, combine the strained zucchini, flour, Parmesan cheese, whisked egg, minced garlic, and black pepper until well incorporated.
04 - Divide the mixture into 8 equal portions (approximately 2-3 tablespoons each) and form into balls.
05 - Heat olive oil in an oven-safe skillet over medium heat. Flatten each ball to approximately ½-inch thickness and sear for 2-3 minutes per side until golden brown.
06 - Transfer the skillet with all fritters to the preheated oven and bake for 10-15 minutes until thoroughly cooked and crispy.
