Chipotle Chicken Avocado Melt (Printable Version)

Smoky chicken with creamy avocado and peppadew peppers, topped with zesty chipotle sauce on perfectly toasted sourdough bread.

# Ingredients:

→ Sandwich Base

01 - 2 slices sourdough bread
02 - 1 tablespoon olive oil
03 - 2 ounces smoked chicken breast, sliced
04 - ¼ avocado, sliced

→ Toppings

05 - 3 Peppadew peppers, sliced
06 - 1 tablespoon fresh chopped cilantro
07 - 1 slice Chao creamy original cheese

→ Chipotle Sauce

08 - ½ cup mayonnaise
09 - 1 tablespoon chipotle adobo sauce
10 - 1 tablespoon lemon juice
11 - 1 clove garlic, minced
12 - ¼ teaspoon coarse salt

# Steps:

01 - Combine mayonnaise, chipotle adobo sauce, lemon juice, minced garlic, and coarse salt in a small bowl. Stir until smooth and adjust seasoning to taste.
02 - Brush the outside of both bread slices with olive oil. Layer the ingredients on one slice starting with the Chao cheese, then add sliced chicken, avocado, Peppadew peppers, and cilantro. Spread chipotle sauce on the inside of the other bread slice and close the sandwich.
03 - Heat a large skillet over medium-high heat. Place the sandwich in the skillet and cook until golden brown and the cheese begins to melt, about 2-3 minutes. Flip and toast the other side until equally golden.
04 - Remove from heat, slice the sandwich diagonally in half and serve immediately while warm.
