Cheesy Squash Casserole (Printable Version)

# Ingredients:

01 - 2 tablespoons butter for cooking
02 - 4 cups sliced yellow squash
03 - 1 medium onion, chopped
04 - 2 large eggs
05 - 1 cup grated cheddar cheese
06 - 1 cup milk
07 - 2 tablespoons butter for mixture
08 - ¼ teaspoon cayenne pepper (optional)
09 - ½ teaspoon kosher salt
10 - ½ teaspoon ground black pepper
11 - 1 sleeve Ritz crackers, crushed

# Steps:

01 - Preheat oven to 350º F.
02 - Melt 2 tablespoons butter in medium skillet over medium-low heat. Add squash and onions and cook until tender.
03 - In a large bowl, lightly whisk eggs. Add cheese and milk, whisking until well-combined. Stir in cooked squash and onions. Melt remaining 2 tablespoons butter in the same skillet used for vegetables and add to the mixture. Season with cayenne pepper (if using), salt, and pepper. Stir well to combine.
04 - Spray a 9x13 casserole dish with cooking spray and pour in the squash mixture. Top evenly with crushed Ritz crackers. Bake in preheated oven for 45 minutes, or until top has lightly browned and casserole is set (doesn't "jiggle" when moved).
05 - Allow casserole to rest for about 3 minutes before serving.
