Cut the potatoes into uniform bite-sized cubes of roughly 1.5 to 2 cm to promote even roasting.

Transfer the cubes to a large bowl, drizzle with olive oil, and toss until every piece is evenly coated.

Scatter the ranch seasoning over the potatoes and toss again until the coating is uniform.

Spread the seasoned potatoes in a single, even layer on the prepared baking sheet, leaving space between pieces to encourage browning.

Dust with garlic powder, black pepper, and a light pinch of salt, keeping in mind the ranch mix is already salted.

Seal the tray tightly with aluminium foil and bake for 20 minutes to gently steam the potatoes and retain moisture.

Remove the foil and continue baking for a further 20 minutes, or until the potatoes are tender and golden. Check earlier if cut smaller.

Evenly sprinkle the shredded cheddar over the hot roasted potatoes.
