Preheat the oven to 400°F (200°C). Lay bacon slices on a parchment-lined baking sheet. Rub brown sugar onto each slice and sprinkle with red pepper flakes. Bake for 15-20 minutes until crispy.

Use a 3-inch round cutter to cut a hole in the center of each slice of brioche bread.

Melt 2 tablespoons of butter in a skillet over low heat. Place both bread slices in the skillet and carefully crack an egg into each hole. Season with salt and pepper. Cook for 1-2 minutes, then gently flip.

Top each bread slice with shredded cheese mixture and the prepared sweet-spicy bacon. Continue cooking until the eggs reach your desired doneness and cheese begins to melt.

Place the bread slices together to form a sandwich, allowing the cheese to completely melt. Slice in half and serve warm.
