A hearty breakfast sandwich with eggs nestled in brioche bread, topped with caramelized sweet-spicy bacon and melted cheese.

# Ingredients:

→ Bread

01 - 2 slices thick-sliced brioche bread

→ Proteins

02 - 2 large eggs
03 - 5 slices bacon

→ Seasonings

04 - 1/4 cup brown sugar
05 - 1 1/2 teaspoons red pepper flakes
06 - Salt to taste
07 - Black pepper to taste

→ Dairy

08 - 1/2 cup shredded cheddar and mozzarella cheese, mixed
09 - 4 tablespoons butter

# Steps:

01 - Preheat the oven to 400°F (200°C). Lay bacon slices on a parchment-lined baking sheet. Rub brown sugar onto each slice and sprinkle with red pepper flakes. Bake for 15-20 minutes until crispy.
02 - Use a 3-inch round cutter to cut a hole in the center of each slice of brioche bread.
03 - Melt 2 tablespoons of butter in a skillet over low heat. Place both bread slices in the skillet and carefully crack an egg into each hole. Season with salt and pepper. Cook for 1-2 minutes, then gently flip.
04 - Top each bread slice with shredded cheese mixture and the prepared sweet-spicy bacon. Continue cooking until the eggs reach your desired doneness and cheese begins to melt.
05 - Place the bread slices together to form a sandwich, allowing the cheese to completely melt. Slice in half and serve warm.

# Notes:

01 - The sweet-spicy bacon adds a unique twist to the classic egg-in-a-hole sandwich.
02 - Adjust the amount of red pepper flakes based on your spice preference.
03 - Serve immediately for the best texture and flavor.
