Bacon Egg Cheese Breakfast Totchos (Printable Version)

Crispy tater tots layered with bacon, eggs, and cheddar cheese for a hearty breakfast that combines nachos and tater tots.

# Ingredients:

→ Main Ingredients

01 - 1 lb frozen tater tots
02 - 6-8 strips bacon, cooked crisp & crumbled
03 - 1 1/2-2 cups shredded cheddar cheese
04 - Salt & pepper, to taste
05 - 6-8 eggs
06 - Thinly sliced green onions, for garnish

# Steps:

01 - Add a single layer of tater tots to a 12-inch cast iron skillet, then distribute remaining tots evenly over the top.
02 - Sprinkle the crumbled bacon, then the shredded cheddar cheese evenly over the tater tots. Season with salt and pepper to taste.
03 - If natural indentations aren't visible, use a spoon to create 6-8 small divots. Carefully crack each egg and slowly release into each well, taking care not to break the yolks.
04 - Bake the totchos at 200°C (400°F) for 22-25 minutes, or until the egg whites are completely opaque.
05 - Remove the skillet from the oven and let rest for 5 minutes. Garnish with green onions, slice into portions, and serve immediately.

# Notes:

01 - You can pre-cook the bacon and have it ready to sprinkle on top of the tots.
02 - This is a great dish for weekend brunch or a casual family breakfast.
03 - Let the dish rest after baking to allow the eggs to set properly.
